This easy-to-prepare recipe calls for nothing but fresh yogurt, herbs, salt and pepper. Yogurt Cheese and fresh bread make a perfect dish to accompany a BBQ or party.

Time required: 15 min active - drains overnight

Servings: 2


  • 2 cups Straus Whole or Nonfat Plain Yogurt
  • Fresh chopped herbs (Parsley, chives or dill)
  • Salt
  • Pepper


Line a sieve with cheesecloth or clean kitchen towel and set it over a bowl (a coffee filter lined with filter paper works as well). Spoon in yogurt and let it drain in the refrigerator until reduced to 1 cup, about 5 hours or overnight. Mix in your favorite herbs (parsley, dill, chives, etc.) and a little salt and pepper to taste. Or keep it plain and serve with some chopped sundried tomatoes or kalamata olives on the side. Another option is to drizzle a little lemon juice mixed with honey on top.

Delicious on fresh sourdough bread, crackers or with fresh, raw vegetables. Makes a great appetizer at parties.
