BBQ Chicken Pita Sandwiches

A great recipe for a summer afternoon.
Time required: 50 min.
- Chicken breasts (and bamboo skewers)
- Olive oil
- Pita bread
- 1 quart Straus Whole or Nonfat Plain Yogurt
- 6 oz. Feta Cheese (or to taste)
- Dill, freshly chopped or dried
- Juice of 1 or 2 lemons
- Red onions, thinly sliced
- Cucumbers, thinly sliced
- Tomatoes, thinly sliced
Cut the chicken breasts into medium-sized chunks. Prepare the marinade by mixing yogurt, dill and lemon juice. Pour over the chicken, using enough to coat pieces (leave the rest of the yogurt mixture to the side). Let the chicken set for approx. 1 hour. While the chicken marinates, soak bamboo skewers in water.
Skewer chicken and bbq. Oil and grill pita bread and cut it in half afterwards. Add feta cheese to the remaining yogurt mixture. Load your sandwich into the pita: Chicken goes on the bottom. Add onions, cucumbers and tomatoes. To finish, drizzle with the yogurt mixture. The remaining yogurt mixture can also be used as a salad dressing.
