Straus Family Creamery Organic Sour Cream contains Organic Milk, Organic Cream, enzymes and nothing more.

 

Straus Family Creamery Sour Cream is made from only our Organic Milk, Organic Cream and two special enzymes that we hand select, in order to create the perfect balance of tanginess and creaminess.

We don’t add any emulsifiers or stabilizers; we prefer, instead, to slowly culture our sour cream in small batches for more than 16 hours, and let nature take its course.

This old-fashioned process creates a thick, luscious texture and a pure, rich, authentic flavor.

What is Pasteurization?

Milk pasteurization is the process of heating raw milk to kill bacteria and reduce the possibility of food-borne illness. At Straus Family Creamery, we use a method called HTST (high-temperature, short-time) when we pasteurize our milk: 171°F for 18 seconds. We ensure all the benefits of pasteurization, while still keeping our milk tasting as flavorful as possible.
