Straus Family Creamery's Organic Barista Milk is simply our Organic Cream-Top Milk that has been lightly homogenized.

There are no additives in Straus Family Creamery's Barista Milk – It’s just great organic milk!  The name “Barista” pays homage to our talented barista customers, who helped us determine the perfect level of homogenization for Organic Barista Milk. In addition to being a consistent, easy-to-use milk (no cream separates or rises to the top), it also retains its sweet, well-rounded taste and lasting finish.

Today, Straus Family Creamery Organic Barista Milk is used as an ingredient by chefs in restaurants, bakeries and many other commercial kitchens. It is also prized by coffee baristas for creating small, tight bubbles in the foam when steamed for coffee drinks.

What is Homogenization?

What is Homogenization?

A cow gives whole milk that has two components, nonfat milk and cream.  Left to settle, the cream will naturally rise to the top. Homogenization, a process introduced in 1932, breaks apart fat molecules under high pressure, leaving the fat suspended and evenly dispersed throughout the milk.  Homogenization does not contribute any nutritional benefit, but is a convenience for consumers, since homogenized milk does not have to be repeatedly shaken or stirred.  At Straus Family Creamery, we homogenize our Barista milk only very lightly – just enough to keep it emulsified, but not so much as to drastically change the taste or digestibility of our milk.
